2 tb Butter
1 sm Onion, chopped
1/4 ts Cayenne pepper
1/4 ts Allspice
1/2 lb Lean ground beef
1/2 ts Salt
1/2 ts Black pepper
1/2 ts Curry powder
1/2 ts Dried thyme
1/4 c Bread crumbs
1 Beaten egg
Mix all ingredients together and form into 2 large patties. Grill or broil 5-7 minutes per side.

1 1/2 lb Ground beef
1 c Rice, regular
1 sm Onion — chopped
2 tb Bacon drippings
1 1/2 ts Salt
1/2 ts Pepper
1 t Paprika
2 oz Olives, stuffed — sliced
2 c Tomato juice
1 1/2 c Water — boiling
1/2 c Cheese, Cheddar — shredded
Saute ground beef, rice, and onion in bacon drippings. Pour off drippings. Add remaining ingredients except cheese; mix well. Place in a 1-1/2 quart casserole. Cover tightly; bake at 300 degrees for 1 hour. Uncover; sprinkle with cheese and continue baking about 10 minutes or until cheese is melted. SOURCE: Southern Living Magazine, April, 1974. ½ bunch cilantro, chopped fine
Juice of ½ lime
2 tsp kosher salt
1 habanero chile, diced
1 serrano chile, diced
2 tomatoes, diced
1 avocado, peeled, seeded, and cut into ½ ” cubes
½ white onion, minced
2 cloves garlic, minced
• Gently mix all ingredients and let flavors blend for 2 hours.

1 Onion, minced
1 Clove garlic menced
1 lb Ground beef
2 ts Shortening
1 md Can whole tomatoes
1 cn Tomato sauce
1 ts Oregano
1/4 ts Pepper
1/2 lb Lasagna noodles
2 1/2 qt Boiling water
1/2 lb Sliced Mozzarella cheese
1 c Cream cottage cheese
1/2 c Cheddar cheese
Saute onion, garlic, and meat in shortening about 20 minutes. Add next four ingredients. with 1 tsp salt. Simmer for 40 minutes. Cook noodles with 1 tbsp salt for 20 minutes; drain. Put 1/3 meat mixture in baking dish. Add layer of noodles, add 1/2 cottage cheese, 1/3 Mozzarella, and 1/2 Cheddar. Repeat layers, ending with remaining meat mixture and top with remaining 1/3 Mozzarella cheese.
