1/4 c Peanut butter
2 tb Margarine
2 lg Eggs
1/3 c Honey
1 1/4 c Whole wheat flour
1 1/4 ts Baking soda
2 ts Ground allspice
3/4 c Rolled oats; quick-cooking
1/4 c Wheat germ
2/3 c Plain yogurt
1 c Apples; chopped fine
1/4 c Walnuts; chopped

Preheat oven to 350 degrees; coat a 9 x 5-inch loaf pan with nonstick cooking spray. In a large bowl, mix the peanut butter, margarine, eggs and honey until smooth; set aside. In a medium bowl, sift together the flour, baking soda and allspice. Add the oats and wheat germ; mix thoroughly. Combine the flour mixture with the peanut butter mixture; add the yogurt, apples and walnuts and blend well. Pour the batter into the prepared pan and bake for 60 to 65 minutes, or until a toothpick inserted in the center comes out clean. Remove from the pan and cool. Store in plastic wrap. Makes 1 loaf.

2 pounds zucchini, shredded
1 1/2 cups Cheddar, shredded
1 can cream of chicken soup
2 cups sour cream
1/4 pound butter, melted
1/2 cup onion, diced
1 teaspoon salt
Shred zucchini and place in a colander sprinkle with salt and toss. Allow to drain for at least 15
minutes. Use your hands to press all the liquid out you can.
Mix all ingredients. Place in a 9 x 13−inch baking dish and bake in a 350 degree oven for 45 minutes to
one hour.

1 1/2 lb Ground beef
1 c Rice, regular
1 sm Onion — chopped
2 tb Bacon drippings
1 1/2 ts Salt
1/2 ts Pepper
1 t Paprika
2 oz Olives, stuffed — sliced
2 c Tomato juice
1 1/2 c Water — boiling
1/2 c Cheese, Cheddar — shredded
Saute ground beef, rice, and onion in bacon drippings. Pour off drippings. Add remaining ingredients except cheese; mix well. Place in a 1-1/2 quart casserole. Cover tightly; bake at 300 degrees for 1 hour. Uncover; sprinkle with cheese and continue baking about 10 minutes or until cheese is melted. SOURCE: Southern Living Magazine, April, 1974. 1/2 c Flour
2 Beaten eggs
1/2 c Buttermilk
1 tb Dijon mustard
2 c Crushed cornflakes
6 Chicken legs or thighs
Dip chicken pieces in flour then beaten eggs and then in crumb mixture. Bake in hot oven 425 F about 25 minutes

1 Onion, minced
1 Clove garlic menced
1 lb Ground beef
2 ts Shortening
1 md Can whole tomatoes
1 cn Tomato sauce
1 ts Oregano
1/4 ts Pepper
1/2 lb Lasagna noodles
2 1/2 qt Boiling water
1/2 lb Sliced Mozzarella cheese
1 c Cream cottage cheese
1/2 c Cheddar cheese
Saute onion, garlic, and meat in shortening about 20 minutes. Add next four ingredients. with 1 tsp salt. Simmer for 40 minutes. Cook noodles with 1 tbsp salt for 20 minutes; drain. Put 1/3 meat mixture in baking dish. Add layer of noodles, add 1/2 cottage cheese, 1/3 Mozzarella, and 1/2 Cheddar. Repeat layers, ending with remaining meat mixture and top with remaining 1/3 Mozzarella cheese.
